Simple Weeknight Gluten Free Mac N Cheese with Nudge Foods

It is hard to resist the creamy, satisfying and just overall goodness of macaroni and cheese. It is a meal that all family members love but making it from scratch can be difficult during the busy school week, we just don’t have time for that. What I am not okay with is unhealthy ingredients that make you cringe not to mention that you can’t even say the names on some of the boxed products.

Simple Weeknight Gluten Free Mac N Cheese with Nudge Foods

So how do you find a simple boxed macaroni and cheese that helps you eat better? Enter Nudge Foods. The Nudge team set out to create a product that not only tasted great but also be a product that you would be confident to bring into your home.

Nudge Foods Macaroni and Cheese

The result: four macaroni and cheese products that are:

  • made with organic ingredients
  • made with grass-fed dairy
  • peanut free
  • non GMO ingredients
  • no artificial colours, preservatives or flavours
  • a source of Omega 3 fatty acids (from the grass-fed dairy and flax pasta)

Nudge Foods Macaroni and Cheese

My family and I were quite impressed with the creamy taste of the macaroni and cheese, good doesn’t have to taste yucky!. The gluten free shells were fantastic and delicious, sometimes gluten free pasta can be quite textured and almost mushy tasting but the shells maintained their shape and texture with a great taste.

While the Nudge Macaroni and Cheese variety is perfect on its own, why not shake it up a little bit and add in vegetables to not only fill you up faster but add even more nutrient value to your meal.

Nudge Foods Macaroni and Cheese

Ingredients

  • one box of Nudge Foods Gluten Free White Cheddar Macaroni and Cheese
  • margarine or butter (2 tbsp)
  • milk (5 tbsp)
  • one zucchini and one carrot (other great vegetable combos are: spinach and red pepper, mushrooms and green beans)
  • one tbsp of coconut oil
  • ground black pepper to taste

Directions

Prepare the macaroni and cheese as directed on the box.

Gluten Free Veggie Mac and Cheese with Nudge Foods

While the macaroni is cooking, cut up your carrots and zucchini. I like to quarter my zucchini and shred my carrots. In a separate pan, add the coconut oil, zucchini and carrots and cook until tender. Add the black pepper as desired.

Once the macaroni is fully cooked, drain the pasta and mix in the butter/margarine and milk. Add the cooked vegetable mixture to the macaroni and cheese and mix.

Serve and enjoy!

Start Fresh in 2015 with The Gluten Free Cookbook from DK Canada

Starting a gluten free diet can be extremely difficult and overwhelming. There is so much to learn, change and adapt to. This applies not only to yourself but to all the family members in your home. When I cook at home not only do the meals have to accommodate my gluten free status but still meet the likes of the family – no tough task there right?!

DK Canada presents The Gluten Free Cookbook with a collection of over 200 gluten free recipes. The recipes are broken down by meal and contains a full nutritional break down to help assist you with eating a well-balanced meal.

My favourite features of this book:

  • easy to follow recipes (directions are short, direct and to the point)
  • ingredients are all easily found in your home
  • wealth of information in the beginning of the book including: finding hidden gluten, a balanced gluten free diet, how to set up a gluten free kitchen and how to eliminate gluten
  • recipes broken down by meal (breakfast, appetizers, soups, pastas, meat,etc)
  • delicious variety of recipes (no getting bored here!)

IMG_1646I made the lasagna (mmmm yummy!) and British breakfast frittata – talk about delicious! Both recipes were simple, nutritious and satisfied every member of our house (bonus!).

Following a gluten free diet is no easy task but DK Canada makes it that much easier for their readers to adopt this lifestyle with a breakdown of recipes and helpful tools to follow a gluten free diet.

Chocolate Dipped Snicker Doodles #EatDrinkBeMerry #glutenfree

Trying to find a delicious gluten free dessert to satisfy everyone at the table this holiday season? Why not try chocolate dipped Snicker Doodles from Udi’s!

Ingredients

  • One package of Udi’s snicker doodles
  • Gluten free chocolate chips

Directions

Melt the chocolate chips. You can either melt them on the stove top or in the microwave.

Dip the snicker doodle in the chocolate about half way.

Rest on a piece of parchment paper to dry.

Enjoy!

Bruschetta Loaves #EatDrinkBeMerry #glutenfree

Growing up in an Italian home we have a few dishes that are present at every holiday get together. My favourite? Bruschetta! How can you not love a toasted loaf of bread with fresh tomatoes and vegetables?!

Here is my gluten free bruschetta loaf for you to enjoy using Udi’s French baguettes.

Ingredients

  • Udi’s gluten free french baguettes
  • two tomatoes
  • one small onion
  • one medium zucchini
  • olive oil
  • garlic, salt and pepper to taste

Directions

Set oven to 350F

Open packages of Udi’s gluten free french baguettes. Make three additional diagonal cuts down the loaf (the loaf will have three cuts in it already). You will have to make the existing cuts (along with your own slightly deeper about 3/4 of the way through the loaf).

Cut the tomatoes, onions and zucchini into small pieces and drizzle with olive oil. Add in salt, pepper and garlic to taste.

Carefully spoon the bruschetta mixture into the diagonal cuts and along the top of the loaves.

Place in the oven and allow to cook until brown on top. This should take roughly 10-15 minutes.
