Banana and Pear Smoothie

I have been loving starting my day with a smoothie! It keeps me full, so simple to make and to take with me on my way to work. You can pretty much put anything in to a smoothie and it tastes great! Well almost anything!
Ingredients:
-1 pear (sliced – your choice skin on or off)
-1 banana
-1 cup of Almond Fresh Vanilla milk
– 2 tsp of ground Flaxseed
Directions:
1. Combine all ingredients into a blender and blend until smooth. Enjoy!

Apple Omelette: Burnbrae Farms Recipe Nest

Breakfast is one of our (well mine for sure!) favourite meals of the day and so important! Without it my whole day is off and I personally tend to over eat and reach for food that I do not usually eat in the afternoon. Having healthy and satisfying options available to my family is so important.
Burnbrae Farms is a Canadian owned and operated egg company with farms in Ontario, Quebec and Manitoba. You have probably seen quite a few of their products in store – ranging from their liquid eggs (egg whites, Omega Pros, french toast, Egg Creations), to shell eggs and even boiled eggs!
On their website you can find a section called the Recipe Nest – it is full of egg recipes (some of the combinations and recipes I would never have even imagined would go together!).
I tried their Apple Omelette recipe and I made some minor changes to it to suit my little ones but it tasted divine! I was really impressed by the taste and the ease of how to prepare it (I prepared it on a Monday morning and it did not take any longer than our usual breakfast routine).
Here is what I did:

Ingredients:
1. 1 unpeeled apple cored and thinly sliced
2. 1/4 tsp of cinnamon
3. 1 tbsp of maple syrup
4. 1 carton of Omega Pro liquid eggs
5. 2 tsp extra virgin olive oil
6. 1/2 cup shredded medium cheese
**I have left out the salt and substituted extra virgin olive oil for vegetable oil and medium cheese for old cheese. I prefer to cook with just olive or canola oil primarily**

Directions:
1. In a covered microwaveable dish, cook the apples on High for 1 1/2 minutes or soft. Add in the cinnamon and maple syrup and set aside.
2. Heat olive oil in the pan and add the carton of liquid eggs.

3. As eggs are cooking underneath, lift up the sides to allow the uncooked portion to flow underneath. Cook for at least another minute or until golden brown.
4. Add the layer of shredded cheese on half of the eggs and places the apples on top. Fold the other half on top and allow the cheese to melt.
5. Remove from heat and cut into half and enjoy!

This was a perfectly filling meal on its own – no need to add toast or meat. My youngest loved the taste of the melted cheese and the soft, sweet apples. I was pretty impressed with the taste as I was not too sure in the beginning (have never added fruits into my eggs before!).

Strawberry Banana Smoothie

I have just found my number one favourite smoothie!
I decided this weekend that I needed to clean up my food and eat healthier as my skin and stomach were suffering from my poor habits. So I thought what better way to start this off then by trying out a new smoothie for breakfast!
The whole preparation and making the smoothie took me under ten minutes, which is perfect for the morning rush. Here is what I did:
Ingredients:
– 1 cup of Almond Fresh Vanilla milk
– 1 cup of frozen strawberries
– 1 banana
– 2 teaspoons of flax seed
Directions:
1. Combine all ingredients into the blender and blend until smooth. Pour and enjoy!
Super simple! And so delicious – was a perfect snack for breakfast at work!

Slow Cooker Shredded Beef

I just received my Whats Cooking magazine from Kraft Canada and was flipping through it and found this awesome recipe for Slow Cooker Italian Shredded Beef Sandwich! (check out their original recipe and so many more!).
I have had shredded pork and chicken before but never thought I could do the same with beef! I tore out the recipe to use later and finally got a chance the other morning.
I knew my family would not like all the ingredients listed in their recipe so I had to change it up a bit and added some of my own ingredients.
It was delicious! I have never tasted something so delicious and tender. I had mine on a bun and my children ate it on rice.
Here is what I did with the recipe:
Ingredients:
– 2lbs of stewing beef
– 1 onion finely chopped
– 1 can of diced tomatoes
– 1 can of tomato paste
– 1 tsp of garlic powder
– 1 tsp of salt
– 1 tsp of black pepper
– 4 hamburger buns
Directions
1) Place stewing beef, onion, diced tomatoes, tomato paste, garlic powder, salt and pepper into slow cooker.
2) Cook on low for ten hours. Shred the beef with a fork.
3) Place on hamburger buns and enjoy!

As a side note, this tasted delicious the next morning mixed in with scrambled eggs on toast! Such a versatile meal – can use it on sandwiches, rice or with eggs!.

Spinach and Sweet Pepper Scrambled Eggs

Eggs are such an important part of our diet in our home. Not only are they great for breakfast but eggs make great snacks and are excellent in wraps!

Lately, I have been trying to simplify and ‘clean’ up some of my basic recipes. I am by no means an expert in clean eating and very much a beginner to this concept of eating. The ideas behind clean eating make so much sense! Slowly, I have been adding in clean eating meals for my family by using ideas from The Everything Eating Clean Cookbook.

A lot of the recipes in the cookbook are taking a couple of tries to encourage my children to try them. This recipe is one of my own favourites that I enjoy on a regular basis and is perfect to take with you on the way to work or on the go in the morning. I got the idea to make it clean from the cookbook (adding the Greek yogurt instead of mayo – I had never heard of this before!) but the basics are my personal favourite way to enjoy scrambled eggs!

Ingredients:

– 1/4 green pepper finely cut
– 1/2 cup of washed spinach
– 4 egg whites (I prefer the liquid egg whites from Burnbrae farms – if you use this just use half of their container)
– 2 whole wheat tortillas
– 1/2 tsp of plain Greek yogurt
– 1/2 tsp of extra virgin olive oil
– 1/4 tomato as toppings

Directions:

1. In a medium frying pan add in olive oil and green pepper and allow to cook for roughly two minutes. Add in spinach. Cook until the green peppers are golden brown or soft.

2. Add in egg whites and cook thoroughly.

3. Spread 1/2 tsp of plain Greek yogurt on one side of each tortilla.

4. Once the scrambled eggs are done cooking add them on top of the tortilla. Add the tomatoes on top in the way you prefer (whole slices or diced).

At this point you can either turn it into a wrap or make something similar to a quesadilla. If you opt for the quesadilla you will have to either bake it in the oven or on the stove top.
