Nutrition Hacks to Get Back on Track #HamiltonBeach

I have a strong suspicion that I am not alone with getting off track when COVID-19 hit back in March. All of our routine, normalcy and good habits went flying out the window when we originally thought we would be home for only a few short weeks. It has now been almost six months since we left the office and have not been back, and many of those bad habits have caught up with me.

I let the majority of my fitness and nutrition goals go these last few months and it has taken a toll on my body. I was becoming a workaholic, constantly at my laptop working without getting up and moving around for breaks. My final wake up call was not fitting into my favourite pants, which prompted me to go old school and take my body measurements with a measuring tape. Needless to say, this sprung me into action – I needed to get back to the gym and fighting my weight gain in the kitchen.

Having faced the struggles of losing weight in the past, being both successful and unsuccessful over the years, I knew that half (or even more) of the battle is done in the kitchen. Eating proper balanced meals, enough protein and increasing vegetables is key to losing weight and gaining muscle mass. But I was struggling to balance work at home with my actual home life with two kids. I was (and still am at times) losing this struggle – I am not ashamed to admit that many times I caved and gave in to snacks that were not healthy for me and my kids to try to save my sanity (not to mention to ensure I joined Zoom meetings on time). I needed something to help me prepare easy, healthy snacks that would support my goals but that did not make my life harder and more complex.

Being prepared with ready made (or easy to make) snacks and meals was key for me when I lost just over one hundred pounds. This time around I am missing the actual time and energy to put into preparing meals (odd to say when I am at home all the time!). I love eggs – they are the perfect protein to me. Easy on the stomach, healthy, filling and you can add veggies to make it the perfect snack.

Hamilton Beach has developed the perfect portion sized Egg Bites maker! It is compact, easy to use and clean. I was able to easily prepare the ingredients for the egg bites, set the machine up to cook while I continued to work, teach my kids or just take a break with my coffee. I prepared several different variations of the egg bites – plain ones with just cheese, egg bites with peppers and mushrooms (I don’t use milk and found that these took on the colour of the mushrooms so my kids refused to eat them) and my personal favourite egg bites with collared greens and cheese (see below for this recipe). I would make bulk egg bites so that I could keep them in the fridge to munch on in the afternoon instead of the Oreos and sweets that I was turning to.

As a side note – I prepared the egg mixture in a large measuring cup as I just found that it was easier to mix up the ingredients and to pour into the egg bites maker.

Here is my recipe for the egg bites with collared greens which ended up being my favourite way to have them. I use water in my egg bites to save some calories but if you prefer milk in your eggs go for it. The only difference I noticed was that when I made the egg bites with water they were smaller in size.

Egg Bite Recipes

Ingredients

  • 2 to 3 large eggs
  • 1 slice of cheese (or shredded cheese)
  • 2 to 3 leaves of collard greens, chopped finely
  • half of a small onion

Directions

  1. Crack the eggs into a large measuring cup. Beat the eggs and add in a little bit of water (I used water for less calories but you can add milk if you prefer).
  2. Add the collared greens and onions into the measuring cup and mix.
  3. Pour the mixture into the Egg Bites Maker to just below the max line.
  4. Rip apart pieces of the slice of cheese and add into the mixture (it was just easier for me to use the sliced cheese that I always have on hand but if you shred cheese, add this too).
  5. Turn on the machine and allow them to cook.
  6. Enjoy!

My Thoughts

Statistics Canada reports that in 2017, 7.3% of Canadians, 12 years of age and older, reported having diabetes. In the US, CDC reported in 2015 that 30.3 million Americans were living with diabetes.

With so many individuals living with diabetes you would think there would be greater acceptance and understanding. I still find that diabetes has a stigma and people dealing with it are faced with this daily. I was privileged to sit in on a research talk about diabetes and the stigma attached to it (they indulge too much, lack of self control, they did it to themselves, overweight, etc..) and how sometimes when we want to help our loved ones, we actually make it worse. Especially when we tear down their food choices, nag them to eat better and so on. Our well meant advice can have that opposite affect and make our loved one feel hurt and angry.

So how do we help those we love?

I love cooking – it brings us together as a family and helps us bond. Since food is constantly around us, what better way to show we care and understand then preparing meals that are healthy for the whole family but also take into consideration the dietary needs of a loved one who has diabetes. You aren’t forcing them to have a special meal, you are not signalling them out and making them feel bad about themselves. Instead, you are enjoying a healthy, nutritious meal that is good for all members of the family.

When this book came in, my husband started going through it and his mouth was watering. He almost didn’t want to give it up to my Dad who was diagnosed with diabetes roughly two years ago! All of the recipes looked delicious – they certainly did not look like they were geared to a special diet. I think this is one of the most important parts about this book, it doesn’t make you feel bad about having diabetes. Instead, you can choose recipes that taste delicious, everyone can enjoy and no one feels left out or bad about themselves.

The recipes themselves were easy to follow, with simple instructions and many of the ingredients you would have on hand. My Dad had purchased an Instant Pot a few years ago as a Christmas gift but never really used it, so this came in handy! My Dad loves to cook so this was a perfect book for him. He had no problem with the instructions and loved the taste and quality of the recipes.

If you have a family member who is living with diabetes and you are looking at ways to encourage healthy eating for all members of the family, I strongly encourage you to pick up this book and start cooking. It is so important that people living with diabetes feel included and not ashamed for having diabetes. Including recipes that all family members will enjoy is a definite must have.

My Thoughts

Roughly four years ago, I made massive changes in my life to lose over a hundred pounds. I changed the way I looked at my diet, what I ate and how active I was. I was (and still am) very proud of how far I came and how I struggled but succeeded.

What I couldn’t be prepared for was the mental battle that came afterwards and how hard it is to maintain that type of weight loss. In the last six months, I have regained fifteen pounds due to poor food choices and lack of exercise. I have no excuses – I have been lazy and lax in my ways, making up excuses that my regain isn’t that bad.

Over the holidays, I did some research on how to kick start back into my weight loss and getting physically fit again. I lost a lot of my weight following a high protein, low carb diet – so keto isn’t new to me. What I struggle with is variety, so that I don’t get bored and don’t return to an unbalanced diet or struggle with meal planning.

This book cotains over sixty recipes along with weekly meal plans. He includes all of the macro breakdowns, shopping lists, equipment lists and even how to start your prep day plan. The prep day plan has to be my favourite feature – prepping for a week can be daunting. To have someone tell you what order you should start each item, set them aside and so on is a lifesaver!

The recipes themselves are very easy to follow – ingredients are listed to the left and instructions on the right. The instructions are very easy to follow, direct and to the point. You can usually complete the recipe in five to six steps. He also includes tips for almost every recipe, which is super helpful for those who are not huge fans of cooking and meal prepping. Aaron breaks down the nutrition content for you, and I can’t stress how important it is to track your meals and every bite you take. It is amazing how quickly calories and carbs add up!

This is an excellent resource and cookbook for those new to keto and those who are returning to the lifestyle. There are recipes that all individuals will enjoy (my husband and eldest enjoyed the spicy pork taco bowls, we just adjusted the recipe for our son) and are easy to make. You don’t have to go out and buy ingredients that you will never use again as so many items you will either already have or purchase weekly. Aaron makes the keto diet easy to understand, prepare and follow. A definite must have for those who want to start keto or those who need new ideas.

My Thoughts

I have been on a low carb, high protein and vegetable diet for the last three years. It has successfully helped me to lose and maintain a loss of just over one hundred pounds. When I first started the diet, I was afraid of all carbs – growing up in an Italian home carbs were essential right? But they also led me to a weight gain and being obese. What I didn’t truly understand was that carbs were not my enemy – it was the choice of carbs in combination with portion sizes (to this day I have a hard time with portion sizes and my kids constantly tease me about how much food I dish them when they say just a little please!).

Low Carb on the Go starts off with a great section on how low carbs is not no carbs and the difference between good and bad carbs. This is so important for all individuals to understand, whether you are following a low carb diet or not. It helps to understand the effects of bad carbs on our blood sugar and the way we feel overall after eating bad carbs (I am sure you can all relate to the crash and burn after a sugar rush?).

Variety is key to this diet – it can be so easy to get into a rut and then give up on following the diet. Trust me – I have done it myself so many times! Recipes can become boring, you want to stick with what works or you may not have enough ingredients to complete a recipe so you may just give up.

Planning ahead and keeping variety in your diet is so important – your body needs it! I liked how this book gives you recipe ideas for every type of meal – from breakfast to snacks to breads (yes breads!) to vegetarian and meat dishes. The recipes were easy to follow and are spread out over two pages. One page being an enticing photo of the completed recipe and the second an ingredient list and directions. Each recipe also contains a breakdown of the caloric content including carbohydrate count, protein, calories as well as many recipes have tips included to ensure the recipe comes out as planned. This is a great recipe book which will be extremely helpful in planning out and building on your low carb diet with its easy to follow instructions and simple recipes. It is a great starting point for those starting out on a low carb lifestyle.

My Thoughts

Life is busy whether you have one partner staying at home or with both parents working. Many families (and individuals as well) are constantly on the go – from work, to doctor and dentist appointments, to extra curricular activities and to the holidays. The last thing so many of us want to do is to have to come home, cook an elaborate meal while trying to make sure it hits all the nutritional guidelines. Many of us have good intentions and will check the internet for recipes, print them out, get the ingredients but then when the day comes we are too tired and resort to the old and faithful recipes. I am one of those!

This recipe book breaks daily meals down not only by the type of meal (breakfast, soups, mains, sides, etc..) but also by time. Only have fifteen minutes to whip together something before soccer practice? Check the list in the beginning of the book and head straight to those pages to pick out a recipe. All of the recipes (and there are over 300) can be prepared in under thirty minutes. Most of the ingredients you will find at home in your pantry but some of the items are a bit more specific (for example not all of us stock veal or liver in our freezer). There are enough recipes that you could easily prepare two weeks of meals that are different each day and gives you plenty of variety while satisfying the whole families personal preferences.

The recipes each take up about one page and include a colour photo as well as easy to follow instructions that are straight and to the point leaving no guess-work. Each recipe also includes a colour coded nutritional guide that highlights whether the recipe is dairy free, low in saturated fat, high fiber, gluten free and so on. Which is very helpful for those that have dietary restrictions due to health or personal reasons.

This recipe book would make an excellent gift for the cook in your life, the individual that loves healthy food but just doesn’t have the time to prepare meals and even a young adult moving out on their own who needs to learn how to prepare healthy meals for themselves.
