Battlefield Visit 2013
My kids took after me and love everything history! So we decided to visit the Battlefield House in Stoney Creek. Had such an amazing time! Here are some of the pictures of our walk. Such a great place to visit!

Sweet Potato Shepard’s Pie
This recipe was one of those ones that I kind of made up as I went along and added ingredients as I saw fit. It turned out great and was lighter than my usual Shepard’s pie.
Here it is:
Ingredients:
– 3 large sweet potatoes
– 1 medium onion cut finely
– 1 medium red pepper cut finely
– 1/2 package of mushrooms
– 1 cup of spinach (washed)
– 1 celery stalk cut finely
– 1 package of ground beef or turkey (roughly a pound)
– 1 can of summer crisp corn
– 1 shredded carrot
– 1/2 cup of sliced grape tomatoes
– garlic, salt and black pepper (about a tsp of each should be enough)
– 1 1/2 tbsp of olive oil
Directions:
1) Fry onion, peppers, mushrooms and celery in olive oil until brown.
2) Add package of ground beef (we use usually a pound) and cook thoroughly.
3) Add in spinach and allow to fry for another two minutes. Add in salt, pepper and garlic for taste (this will change depending on personal preference). Add the 1/2 cup of sliced grape tomatoes and allow to fry for roughly five minutes. This should create a small amount of ‘sauce’ in the pan to give it a little bit more of a flavor (my family loves their tomatoes!).
4) Set aside and allow to cool.
5) Boil the three large sweet potatoes until soft. When softened mash with a fork until smooth. If you prefer you can add a little bit of butter.
6) Add the meat and vegetables mixture into a large and deep casserole dish when cool.
7) Add the can of corn on top of the meat and spread out evenly.
8) Cover with the sweet potatoes evenly – this can be tricky so what I usually do is spoon a little into each section and slowly spread it out.
9) Turn oven on to 375F and bake for about twenty minutes.

Blueberry Muffins
I love muffins and they make the perfect on the go snack in the morning and on our way out in the early evening to soccer. Blueberries are a big hit in our home and I love using them up in our muffin recipes. Here is one of my favourite recipe!
Ingredients
– 2 cups of flour
– 2 tsp of baking powder
– 1/4 tsp of salt
– 1 cup of sugar
– 1 cup of melted butter
– 2 eggs
– 3/4 cup of milk
– 1 1/2 cups of blueberries (love using fresh ones)
Directions
1. Preheat oven to 375F.
2. Combine flour, baking powder and salt into one bowl and set aside.
3. Combine sugar and melted butter in a second bowl. Add two beaten eggs into mixture and whisk well.
4. Slowly add milk and whisk continuously.
5. Add this mixture into the dry mixture and mix well.
6. Add blueberries and mix well.
7. Add into muffin wrappers on a muffin tray. Bake in oven for 25-30 minutes or until golden on top (or when you insert a toothpick it comes out dry).
Enjoy! This recipe makes twelve muffins.

Pizza Recipe
I LOVE LOVE this recipe for pizza!! It comes out so delicious and soft! And added treat is that my youngest is teething right now so he loves to munch on the crust of the pizza!!
Ingredients:
– 4 cups of flour
– 2 cups of warm water
– 1 tbsp of yeast
– 1/2 tbsp of sugar
– 1.5 tbsp of olive oil
– 1 tsp of salt
– can of tomato pizza sauce
– desired pizza toppings (cheese, pepperoni, mushrooms, peppers, etc..)
Directions:
1. In a large mixing bowl, add 1 cup of warm water and 1 tbsp of yeast and a 1/2 tbsp of sugar. Let the mixture stand for five minutes and then stir.
2. Add to the bowl: 2 cups of flour, 1 tsp of salt and 1.5 tbsp of olive oil. Stir the mixture together until it becomes wet and sticky.
3. Add in 1 cup of flour and 0.5 cup of warm water. Knead together until soft and smooth on a floured surface or in the bowl. Add in up to one more cup of flour as needed to make the dough smooth.
4. Let the dough sit for ten minutes. At this point you can either divide the dough up into two and make two small pizzas or make one large rectangle one.
5. Take each roll and knead again. Make sure the pan that you chose to use is lightly oiled. Roll out the dough to ensure that it will fit your pan.
6. Preheat oven to 425F.
7. Place your dough on your pan and allow it to sit for five minutes. Spread your tomato sauce over the dough.
8. Add any toppings that you desire – we like cheese, bacon and peppers.
9. Bake in oven for 15 to 20 minutes (check the bottom and edges to ensure it is golden brown) and enjoy!
