Banana Cinnamon Raisin Bites

I was so excited to be able to participate in the Sun-Maid Canadian Family recipe contest this year!
My husband loves his raisin bread but we tend to eat it plain and just toasted. So we were all really excited to be able to shake things up a bit and make something unique for our family.
We began to brainstorm ideas and some important criteria for us were: quick, simple, fruits and fun! My boys love their bananas and strawberries so we definitely wanted to include them in our recipe. In the end we ended up with two different versions of the same recipe. One is simpler and perfect for after school and the second takes an extra ten minutes in the oven but still easy to make.
The ingredients for both are exactly the same. You will need:
– three bananas
– 1/4 cup of Maple syrup
– 1/2 cup of strawberries
– 6 slices of Sun-Maid Raisin Cinnamon Swirl Bread
Directions:
1. Cut the bananas into thin slices.
2. Cover the bananas with Maple Syrup and mix until evenly covered (this is my favourite part and tastes so yummy!).
3. At this point, you can either go one of two ways. The first way is to lightly toast the Sun-Maid Raisin Cinnamon Swirl bread. Cover with banana and syrup mix. Top with strawberries. We cut our strawberries in half and put the bananas in the middle and covered the whole thing with more syrup.
4. The other way we completed the recipe was by arranging the bread in cupcake pans (this was quite tricky and required some patience!). Then we poured the banana and syrup mix on top. We then baked them at 350F for just under ten minutes (oven times may vary – you only want to lightly toast the bread otherwise the bananas will soak through and stick to the pan). Remove the bread from the pan and place into individual bowls (we used our ice cream bowls!). They had such a unique shape to them – our son said they looked like little flowers! Add some extra syrup and bananas on top, sprinkle with strawberries – enjoy!
I wish we had almond slivers to sprinkle on top of the strawberries as well but they tasted delicious as is. The total prep time for this was under five minutes and total cook time between 5-15 minutes depending on which version you use.

Strawberry Banana Smoothie

I have just found my number one favourite smoothie!
I decided this weekend that I needed to clean up my food and eat healthier as my skin and stomach were suffering from my poor habits. So I thought what better way to start this off then by trying out a new smoothie for breakfast!
The whole preparation and making the smoothie took me under ten minutes, which is perfect for the morning rush. Here is what I did:
Ingredients:
– 1 cup of Almond Fresh Vanilla milk
– 1 cup of frozen strawberries
– 1 banana
– 2 teaspoons of flax seed
Directions:
1. Combine all ingredients into the blender and blend until smooth. Pour and enjoy!
Super simple! And so delicious – was a perfect snack for breakfast at work!

Protein Smoothie with Almond Fresh Vanilla & Peanut Butter

I have tried to drink protein shakes in the past and could never get past their chalky and odd taste. I wanted to give it another try as I am trying to increase my protein intake but I had to change the way I was making them as.
I was on Facebook when I saw this awesome looking recipe from Almond Fresh (link to their original post can be found here) but I did not have fresh banana’s or their original brand in my fridge,  so I made my own little twist on it and it was DIVINE! It honestly tastes like a Reese’s Pieces!. It went down so well and it filled me up for the whole morning (still had a small healthy snack before lunch).
Here is what I did:
Ingredients:
– 1 scoop of Whey Protein powder (triple chocolate)
– 1 cup of Vanilla Almond Fresh
– 1 tablespoon of peanut butter
– 3 ice cubes
Directions
1). Combine all ingredients into blender and blend on medium speed for about 5 minutes (I like my smoothies very smooth!).
2). Pour into a glass and enjoy!
So simple right?!! And absolutely delicious!
I worked out the basic nutritional facts on it and here they are:
Calories: 320
Carbs: 28g
Protein: 30g
Fat: 10.5g

Blueberry Muffins

I love muffins and they make the perfect on the go snack in the morning and on our way out in the early evening to soccer. Blueberries are a big hit in our home and I love using them up in our muffin recipes. Here is one of my favourite recipe!
Ingredients
– 2 cups of flour
– 2 tsp of baking powder
– 1/4 tsp of salt
– 1 cup of sugar
– 1 cup of melted butter
– 2 eggs
– 3/4 cup of milk
– 1 1/2 cups of blueberries (love using fresh ones)
Directions
1. Preheat oven to 375F.
2. Combine flour, baking powder and salt into one bowl and set aside.
3. Combine sugar and melted butter in a second bowl. Add two beaten eggs into mixture and whisk well.
4. Slowly add milk and whisk continuously.
5. Add this mixture into the dry mixture and mix well.
6. Add blueberries and mix well.
7. Add into muffin wrappers on a muffin tray. Bake in oven for 25-30 minutes or until golden on top (or when you insert a toothpick it comes out dry).
Enjoy! This recipe makes twelve muffins.

Pizza Recipe

I LOVE LOVE this recipe for pizza!! It comes out so delicious and soft! And added treat is that my youngest is teething right now so he loves to munch on the crust of the pizza!!
Ingredients:
– 4 cups of flour
– 2 cups of warm water
– 1 tbsp of yeast
– 1/2 tbsp of sugar
– 1.5 tbsp of olive oil
– 1 tsp of salt
– can of tomato pizza sauce
– desired pizza toppings (cheese, pepperoni, mushrooms, peppers, etc..)
Directions:
1. In a large mixing bowl, add 1 cup of warm water and 1 tbsp of yeast and a 1/2 tbsp of sugar. Let the mixture stand for five minutes and then stir.
2. Add to the bowl: 2 cups of flour, 1 tsp of salt and 1.5 tbsp of olive oil. Stir the mixture together until it becomes wet and sticky.
3. Add in 1 cup of flour and 0.5 cup of warm water. Knead together until soft and smooth on a floured surface or in the bowl. Add in up to one more cup of flour as needed to make the dough smooth.
4. Let the dough sit for ten minutes. At this point you can either divide the dough up into two and make two small pizzas or make one large rectangle one.
5. Take each roll and knead again. Make sure the pan that you chose to use is lightly oiled. Roll out the dough to ensure that it will fit your pan.
6. Preheat oven to 425F.
7. Place your dough on your pan and allow it to sit for five minutes. Spread your tomato sauce over the dough.
8. Add any toppings that you desire – we like cheese, bacon and peppers.
9. Bake in oven for 15 to 20 minutes (check the bottom and edges to ensure it is golden brown) and enjoy!
